Breakfast Potatoes With Ham, Onion And Mushrooms

Summer is a time for adventure! When I was a kid, my favorite adventures involved summer camp. I’d make crafts, learn archery, go boating and do a million other fun things. Now that my girls are old enough, I love sending them to summer camp too (even if I get a little jealous of all the cool stuff they get to do). 

My youngest is the most fearless of my two girls and she’s always looking for adventure! Since she’s been begging to go to horse camp all year, it was the first thing we signed her up for. She’s obsessed with horses and couldn’t have been more excited.

Of course, I wanted to send her off each morning with something more than a bowl of cereal. Since we don’t have a lot of extra time in the mornings, I decided to use Tasteful Selections Bite Size Potatoes to whip up some delicious breakfast potatoes. I love that they don’t need to be washed or peeled and the small size makes them cook faster too! I’m pretty sure Tasteful Selections made these potatoes just for busy moms like us! 

These potatoes may be small but they’re so full of flavor that I’ve been using them a lot lately. They made a great side dish for my Lemon Rosemary Chicken recipe and I knew they’d be perfect for breakfast too. With flavors like Purple Passion, Sunset Fingerlings, White Delight and more, it’s fun to try different ones. This time I went with Sunburst Blend.

The best part about this recipe is that as long as you’ve got Tasteful Selections bite size potatoes, you can use whatever else you’ve got on hand. I made this recipe with mushrooms, onions and ham but you can also substitute sausage, peppers or whatever else you have in the fridge.  

Breakfast Potatoes

Start by combining potatoes, onions and olive oil in a large bowl.

Next, add rosemary, thyme, salt and pepper.

Cook over medium heat in a cast iron skillet (a regular skillet will work too). Once the breakfast potatoes begin to brown, add your mushrooms. Don’t add them too soon because they cook quickly.

Give the mushrooms about three minutes, then add the ham.

Since this ham is pre-cooked, you’re really just reheating it. Once the ham is cooked, you’re ready for breakfast!

While the potatoes had been cooking, I made some eggs to go along with them and our adventurous breakfast was a hit! You can even make the eggs right in the skillet with the potatoes, as long as you have kids that don’t mind their food being mixed together. Mine are more picky so I had to keep them separate. I guess having the food touch is a little TOO adventurous!

These breakfast potatoes with mushrooms, onion and ham are totally worth waking up for! Pair them with eggs for a breakfast the whole family will love!

Ingredients

  • One bag (24 oz) Tasteful Selections Sunburst Blend potatoes
  • 6 oz mushrooms
  • 1/2 white onion (chopped)
  • 2 tbsp olive oil (separated)
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/4 cup pre-cooked ham (diced)
  • Salt & pepper to taste

Instructions

  1. Quarter potatoes and combine potatoes, onions and olive oil in a bowl.
  2. Add rosemary, thyme, salt and pepper.
  3. Cook over medium heat until potatoes begin to brown (approx 10 minutes), then add mushrooms.
  4. Once potatoes are crispy and golden, add ham. Cook until ham is heated through.
  5. Serve hot.
