I recently worked with Great Day Farms for a sponsored social media campaign. Their hard boiled eggs made life so easy that I’ve included them in this post too. All opinions are 100% my own.

I knew deviled eggs were a pretty popular party food but until I posted these recipes for deviled eggs, I had no idea. It seems that people REALLY love new deviled egg recipes!

I can’t blame them. Deviled eggs are so delish and plus they’re perfect for just about any occasion.  They make great Super Bowl food, appetizers for cookouts and a great dish when you need to bring something to a party. We love them too and since I hadn’t made them for awhile, I decided to experiment a little.

Normally I’ve always made classic deviled egg recipes but since I’d just bought avocados, it seemed like the perfect time to try avocado deviled eggs. Combined with the bacon bits and blue cheese I had in the fridge, I felt like I had the winning combination of ingredients for deviled eggs!

Avocado Deviled Eggs

First you’ll want to hard boil your eggs. I’ve seen different answers to how long to boil eggs but 12 minutes seems to get the best results. Cool and peel the eggs and you’re good to go.

I have a little secret though. These aren’t eggs that I boiled…they’re Great Day Farms hard boiled eggs. I am NOT a fan of peeling eggs because the perfectionist in me hates when they don’t look as pretty as I’d like. The eggs from Great Day Farms are already cooked and peeled so not only will your eggs look perfect, you’ll save a ton of time too (you can find them in the deli section of Walmart).

There are plenty of different ingredients for deviled eggs but of course egg yolks are the most important. After cutting the eggs lengthwise, empty the yolks into a bowl.

Add mayo…

and dijon mustard.

Finally add a diced avocado and a little lime juice. I also mixed in a little salt and pepper.

Mash the ingredients together well. I just used a large fork but you can throw it all in a food processor if you really want easy deviled eggs. Put the deviled egg mixture into a piping bag and fill the eggs.

Finally, top the deviled eggs with bacon crumbles and blue cheese.

These are seriously the best deviled eggs I’ve ever made!

You’re going to want to make a bunch for your next party because these deviled eggs will disappear faster than wine on girl’s night out!

Ingredients

  • 6 eggs, hard boiled
  • 2 tbsp mayonnaise
  • 1 tbsp dijon mustard
  • 1 avocado
  • 1/2 tbsp lime juice
  • salt and pepper to taste
  • 3 tbsp bacon crumbles
  • 3 tbsp blue cheese crumbles

Instructions

  1. Cut hard boiled eggs lengthwise and empty yolks into a bowl
  2. Add mayonnaise and dijon mustard
  3. Peel and cut the avocado. Add the avocado and lime juice to the egg mixture.
  4. Add salt and pepper to taste
  5. Mash until smooth. I used a large fork but you can also use your food processor.
  6. Use a piping bag to fill the eggs.
  7. Top with bacon crumbles and blue cheese
