Brie Grilled Cheese With Prosciutto

This is a sponsored post for Thomas’ English Muffins but my love for their English muffins is all my own!

Think English muffins are just for breakfast? Think again! This brie grilled cheese makes such an amazing lunch or dinner, you may never go back to eating regular grilled cheese sandwiches again!

You can never go wrong with a good grilled cheese sandwich. There’s something about that deliciously melted cheese that makes it one of our favorite comfort foods.  Sometimes I like to change things up though and this time I decided to take it up a notch with a brie grilled cheese.

I’d already picked up Thomas’ English Muffins from Walmart since they’re a staple in our pantry. They’re so convenient and we use them for everything from snacks to dinner recipes. I knew they’d be absolutely delish stuffed with brie, prosciutto, caramelized onions and even a little arugula.

Splitting Thomas' English Muffins with a fork

One of the things I like most about these muffins is the way the juices from the food collect in all the nooks and crannies crevices, making them even more flavorful. For the best nooks and crannies texture, I always split them with a fork, a little secret my Grandma taught me.

Is it weird that I got a little excited as I gathered my ingredients? I just knew these were going to taste amazing!

Brie Grilled Cheese With Prosciutto

You’ll want to start by splitting two Thomas’ English Muffins with a fork. I was tempted to take a bite because the English muffins alone looked so good!

Ingredients for prosciutto and brie grilled cheese

Top 1/2 of each muffin with three slices of prosciutto.

Add a thick slice of brie cheese. I like to slice a brie wheel to get a perfectly round shape for my sandwich. You can also slice the brie from the side and lay the slices over the top.

Pour caramelized onions over the cheese.

Top with the other half and cook until cheese is melted and both sides of the English muffins are golden brown.

Stuff with arugula and serve hot!
