Easy Lemon Rosemary Chicken With Potatoes

This lemon rosemary chicken with potatoes is an easy recipe that’s full of flavor. It’s sure to become a family favorite!

If there’s one thing I love, it’s adventure and my favorite adventures involve travel! I caught the travel bug early and by the time I was in my 20’s, I was backpacking solo through Europe for months at a time. 

I visited a lot of places but the one place I always came back to was Italy! Whether it was eating gelato at the Trevi fountain in Rome or hiking the hills of the Cinque Terre, it was such a magical place to me. Years later when I met my husband, I brought him along and we made our own Italian adventures.

One thing that always stood out to me were all the lemon trees. They made the Italian landscape bright and cheery and now lemons always bring back all those special memories.

That’s one reason I love cooking with them so much and when I teamed up with Tasteful Selections to create a recipe for their Adventure In A Small Bite sweepstakes, I knew just what to make. (Plus, keep reading to learn how you can enter to win their awesome adventure prize package)

This Lemon Rosemary Chicken recipe has been a family favorite for years and I knew Tasteful Selections Sunrise Medley would go with it perfectly! If you’ve never tried these yummy bite size potatoes, you have been totally missing out! They’ve got tons of great taste in a small bite and the best part is that they’re so much easier to cook than full size potatoes.

As a busy mom, I love how much time these save me. They’re pre-washed and I don’t even have to cut or peel them…they’re good to go straight from the bag. It makes prepping meals easy so that I can focus on enjoying dinner with my family instead.

They also come in a variety of flavors. In addition to the Sunrise Medley that I used for this Lemon Rosemary Chicken recipe, there’s also Purple Passion, Sunburst Blend and White Delights. They all taste great and make my life easy so it’s a win/win! Now, let’s make a delicious meal for the fam!

Lemon Rosemary Chicken

I used a whole cut-up chicken this time but I’ve also made this with chicken quarters and chicken thighs. It’s just a personal preference so use what you like. It just works better if you use chicken that has the skin still on it.

Lift the skin of the chicken and slide in two rosemary sprigs, then top with a lemon slice. Be sure the rosemary is under the chicken, with the lemon on top. You want to get all that yummy rosemary flavor!

For the chicken legs, I  used one sprig of rosemary and half a lemon. Since the wings are so small, I just placed rosemary and a 1/2 slice of lemon on top.

Next, mix potatoes with olive oil and Italian seasoning.

Tuck the potatoes in a single layer around the chicken.

Bake for 45-50 minutes or until chicken reaches a temperature of 165°.

This lemon rosemary chicken with potatoes is an easy recipe that's full of flavor. It's sure to become a family favorite!


  • 1 whole chicken (cut)
  • 1 bag of Tasteful Selections Sunrise Medley Potatoes
  • 12 rosemary springs
  • 2 lemons (sliced)
  • 3 tbsp Italian seasoning
  • 2 tbsp olive oil
  • Salt & pepper


  1. Place chicken pieces in a roasting pan
  2. Lift the skin of the breasts and thighs and insert two rosemary sprigs and one lemon slice.
  3. Pull the skin back over the top.
  4. In a large mixing bowl, combine potatoes, olive oil and Italian seasoning.
  5. Place potatoes in a single layer around the chicken.
  6. Season with salt and pepper
  7. Bake at 375 for approximately 45-50 minutes. Larger breasts may need a little longer so use a meat thermometer to be sure the pieces have reached  165°.
  8. Remove from oven and serve hot.
