Rice Krispie Easter Eggs

Want to surprise your family with a fun Easter dessert? These delicious Rice Krispie Easter Eggs are easy to make and a super tasty treat for the holiday!

 

One of my favorite things to do this time of year is Easter egg decorating but I also love making delicious Easter treats. This time I figured I’d have some fun combining the two with these chocolate Rice Krispie Easter Eggs.

The idea came to me as I was walking through the Easter section at the store the other day. I saw an Easter egg mold and knew I could use it for something yummy! (If you really want to make it easy, this Easter treat kit comes with the mold, candy melts, piping bags and a bonus mold for making bunnies). 

Rice Krispie Easter Eggs

The first thing you’ll need to do is make your “eggs”. I just used the regular recipe for Rice Krispie treats and halved it. After melting the butter and mini-marshmallows, I removed the mixture from heat and stirred in the Rice Krispies.

I used the mold to shape the eggs, leaving the top flat so that they’d lay still as I decorated them. This part is always tricky since the mixture wants to stick to my fingers. I’ve found that putting a little flour on my hands first seems to help.

Melt 10 ounces of milk chocolate chips or dark chocolate in the microwave, stirring frequently. Dip the eggs in the melted chocolate and place on a baking sheet covered with wax paper.

Melt your candy melts in the microwave, one color at a time. You can cut the corner off a sandwich bag or drizzle with a spoon but I’ve found that I get the best results when I use these inexpensive plastic squeeze bottles.

Melt the candy and pour it into the bottles using a small funnel (It’s best to have a few so that you don’t have to rinse them out in between colors). They worked perfectly for decorating these eggs and I use them all the time for other holiday treats too.

I’d thought about adding sprinkles or other candy decor but these looked so pretty with just the drizzled candy that I left them as is. Feel free to go all out with your own.

My family broke all the rules and ate dessert before dinner when they saw these Easter Egg Rice Krispie treats!  They’re so delish and perfect for a special Easter treat, class parties, a teacher gift or pretty much any Easter occasion.

These delicious chocolate covered Rice Krispie Easter Eggs make the perfect Easter treat!

Instructions

  1. Cover a baking sheet with wax paper and set aside
  2. Melt 1 1/2 tbsp butter over low heat
  3. Add marshmallows, stirring frequently until melted
  4. Remove from heat and stir in cereal
  5. Use Easter egg mold to form egg shapes, flattening the side facing up
  6. Melt chocolate in microwave, stirring frequently
  7. Dip eggs in chocolate and place on wax paper
  8. Melt candy melts, one color at a time, and drizzle over eggs using icing bags or plastic bottles (you can also cut a small piece off the corner of a sandwich bag)
  9. Refrigerate until chocolate hardens, approximately 30 minutes
