White Chocolate Peanut Butter Christmas Cookies

I love the holidays and one of my favorite holiday traditions is making cookies (like these Mint Chocolate Meringue Christmas cookies. Not only are they fun to eat but they make great gifts for teachers, friends and anyone else who deserves a little love!

This year I decided to try something a little different.  I’m seriously obsessed with peanut butter and since it always goes so well with chocolate, I thought it would be fun to combine them into a delicious Christmas cookie. 

Of course, I’d need some helpers and I just happen to have two girls that love “cooking” with mommy! I handed over the NILLA wafers and peanut butter and they got right to work.

I love how easy this was for the girls. It’s so much more fun when the kids can help!

 After dipping the cookie sandwiches in chocolate and adding a little more decor, we had our cookies. These were every but as good as you’d think!

These White Chocolate Peanut Butter Christmas Cookies will get

Instructions

  1. Put 1/2 tbsp peanut butter between two Nilla Wafers and continue until you have 24 cookie “sandwiches”.
  2. Use a knife to scrape excess peanut butter off the sides Nilla wafers with peanut butter for Christmas cookies
  3. Add vegetable oil to white chocolate chips and melt over stove with a double boiler or by using a bowl placed over the top of a saucepan (see below for more detailed instructions on melting chocolate Melting chocolate on stove
  4. Dip cookies in chocolate and place on wax paper
  5. Immediately top with sprinkles (do this before the chocolate hardens)
  6. Melt red candy melts in microwave or over stove
  7. Drizzle over cookies
  8. Repeat with green candy melts
  9. Enjoy

Notes

I don’t recommend melting white chocolate in the microwave because it usually won’t melt evenly and can seize up. If you don’t have a double boiler, you can use my trick.  Put approximate one inch of water in a saucepan, then place a bowl on top of it.  Pour your chips and vegetable oil in the bowl and you’ve got your own version of a double boiler.  Stir frequently and when the chocolate reaches a smooth consistency then dip your cookies.
