Healthy Chicken Salad Recipes to Tickle Your Tastebuds

Light Chicken Salad

Ingredients

  • Boneless and skinless chicken breasts, cooked and shredded- 2lb.
  • Halved red grapes- 1 and 1/2 cups
  • Chopped pecans- 1/2 cup
  • Diced green onions- 1/3 cup
  • Plain Greek yogurt- 1/2 cup
  • Mayo- 1/2 cup
  • Dijon mustard- 1/4 cup
  • Dried sage- 1/2 teaspoon
  • Smoked paprika- 1/2 teaspoon
  • Garlic powder- 1/4 teaspoon
  • Fresh lemon juice- 1-2 tablespoons
  • Salt- to taste
  • Pepper- to taste

Method

  • Take a big bowl. Add pecans, red grapes, green onions and shredded chicken in it.
  • Take a small bowl. Add mayo, Greek yogurt, sage, mustard, smoked paprika, mayo, lemon juice, garlic powder, salt, and Whisk all the ingredients together.
  • Add the mixture in the small bowl to the chicken mixture in the big bowl.
  • Gently stir and mix until all the ingredients are combined together perfectly.
  • Serve in a cup of Bibb lettuce or on a bread slice.

Chopped Chicken Salad in Southwestern Style

Ingredients

Salad

  • Chopped romaine lettuce- 6 cups 
  • Cubed cooked chicken- 6 cups 
  • Corn-1 and 1/2 cups
  • Black beans-1 and 1/2 cups
  • Diced tomatoes- 2 nos.
  • Diced avocado- 1 no.
  • Diced red onion- ½ no.
  • Shredded cheddar cheese- 3/4 cup
  • Crushed tortilla chips- 1 cup
  • Chopped cilantro- a handful 

Dressing

  • Plain Greek yogurt- 1/2 cup
  • Extra virgin olive oil- 3 tablespoons
  • Honey- 2 teaspoons
  • Apple cider vinegar- 2 teaspoons
  • Minced garlic- 1 teaspoon
  • Lime- 1 no. (make juice)
  • Finely diced jalapeño- ½ no.
  • Taco seasoning- 2 heaping teaspoons
  • Salt- to taste and if required

Method

  • Add all the salad ingredients except the tortilla chips in a big bowl.
  • Add all the ingredients for dressing except salt in a small bowl and whisk together. Taste and add salt only if required and as per preference.
  • Pour the contents of the small bowl into the big bowl and mix everything together gently to combine.
  • Add tortilla chips and serve cold.

Poppy Seed Dressing Chicken Salad with Cranberry and Pecan

Ingredients

Salad

  • Cooked and chopped chicken breast- 4 cups
  • Chopped pecans- 1 cup
  • Dried cranberries- ½ cup
  • Chopped green onions- 4 nos.

Dressing

  • Mayonnaise- 1/2cup
  • Sour cream- 1/4cup
  • Softened honey- 2tablespoon
  • Dijon mustard- 1tablespoon
  • Poppy seeds- 1tablespoon
  • Salt- to taste

Method

  • In a big bowl, combine together all the salad ingredients.
  • In a small bowl, mix together all the dressing ingredients until properly combined.
  • Add salt as per your preference.
  • Add the contents of the small bowl to the big bowl and toss.
  • Taste and add more salt if required.

Chicken Salad with Jalapeño

Ingredients

    • Boneless and skinless chicken breasts, evenly pounded- 2
    • Garlic powder- 1teaspoon
    • Onion powder- 1teaspoon
    • Smoked paprika- 1/2teaspoon
    • Cumin- 1/2teaspoon
    • Lengthwise sliced jalapeñoswithout seeds or stems- 4 nos.
    • Softened cream cheese- 4ounces
    • Mayonnaise or sour cream- 1/2cup
