4 C sliced green cabbage

4 cup low-sodium vegetable broth

3 Tbsp apple cider vinegar

1 28-oz crushed tomatoes

2 cup rotisseries chicken breast (shredded)

What to do:

Take a pan; add olive oil and fry carrot, cabbage, onion, and jalapenos until they’re soft for 5-7 minutes. Twist the mixture with crushed tomatoes, salt, apple cider vinegar, brown sugar, chicken breast and stir until they are finely mixed. Let the mixture simmer on little flame for 20 minutes, stirring occasionally.

Butternut-Almond Soup with Fennel and Popcorn

Ingredients

2 tsp ground fennel seed

2 tsp coconut oil

1 tsp dried thyme

1 medium-sized seeded and finely cubed butternut squash

1 medium-sized sliced onion

¼ cup creamy almond butter

1 cup popcorn

5 cup low-sodium vegetable broth

What to do?

Saute the thyme and funnel in a pan using coconut oil for 1 minute. When they slightly shift the color, add butternut squash, onion, salt and pepper and stir. Let the mixture cook for 5-7 minutes until all the vegetables are softened and mixed. Now add the broth, make it boil and let it simmer for 20 minutes until you see squash melting (softening).
